How do you cook artichokes? Once you’ve got the hang of it, you won’t want to go without fresh artichokes. Artichokes inevitably make us think of summer Mediterranean cuisine. With the right recipes, artichokes can be enjoyed on holiday.
Artichokes are an extraordinary vegetable. It takes some “work” and patience until you can get to the delicate interior of this gourmandize. But the pleasure is worth it. The vegetables are healthy, tasty and mentally promise a short culinary trip to Italy.
Prepare artichokes – step by step:

First, you cut off the stem and the hard, pointed, and dark-coloured outer leaves. If you manage to break off the handle on the edge of a table, you may be able to pull out the hay inside from below. If not, that’s not a problem.
The hay can be cut away while cooking or even while eating. Some cooks also remove the top tip of the bud. You can do it like this, but it is not necessary. Now fluff up the leaves a little with your thumbs.
The gems are then placed in the gently boiling salt and lemon water for 40 to 45 minutes.
The artichokes are done when the individual leaves can be easily removed.
Then you take them out of the water, drain them well and let them cool down on a kitchen towel. Cooking time in the pressure cooker takes about 20 minutes. The disadvantage here is that they don’t cook in the brew, which gives the vegetables an extra flavour note.
Tempting artichoke recipes
If you’ve given the vegetables time to cool down a bit, you can start feasting and serve the artichokes with a light herb dressing.
An excellent way to enjoy healthy and low-calorie food. As mentioned above, the hay inside is not eaten. Before you can get to the buttery artichoke bases, you have to remove them.
Artichokes with a filling or saffron artichokes, for example, are real delicacies.
We would also like to recommend the following variant: Cut the cooked artichoke in half, remove the hay, drizzle with olive oil and then let it simmer on the grill. An aromatic delicacy that goes perfectly with grilled fish.
