Steaming is really safe, and it is fat-free. We can make it with fish stock, bouillon, or only water. Hence, the steaks and fillets must be very lean and uniform in appearance. Position them in a thin layer under salad greens, in a bamboo shell, or in a wrapped daisy, so that the bottom does not come into contact with the boiling water.
